Personen<\/p>\n<p>&nbsp;<\/p>\n<h4>ZUTATEN:<\/h4>\n<p><strong>F\u00fcr das K\u00fcrbis-Kohlrabi-Steak:<\/strong><\/p>\n<ul>\n<li>1 gro\u00dfer K\u00fcrbis<\/li>\n<li>2 Kohlrabi<\/li>\n<li>200 g Feta<\/li>\n<li>2 Eier<\/li>\n<li>evtl. etwas Semmelbr\u00f6sel<\/li>\n<li>K\u00fcrbiskerne<\/li>\n<li>etwas Salz zum Kochen und \u00d6l zum Ausbraten<\/li>\n<li>etwas Salz, Muskat<\/li>\n<\/ul>\n<p><strong>F\u00fcr die Sauce:<\/strong><\/p>\n<ul>\n<li>1 EL Tomatenmark<\/li>\n<li>\u00b4etwas Oliven\u00f6l<\/li>\n<li>1 Glas Rotwein<\/li>\n<li>rosa Pfeffer<\/li>\n<li>etwas Zucker<\/li>\n<li>Cognac<\/li>\n<li>ggf. etwas Kartoffelst\u00e4rke<\/li>\n<li>zum Verfeinern etwas Sahne, Creme Fraiche oder Hafersahne<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<h4>ZUBEREITUNG:<\/h4>\n<p><strong>F\u00fcr das Steak:<\/strong> K\u00fcrbis und Kohlrabi sch\u00e4len, raspeln und in kochendem Salzwasser 2 Minuten blanchieren.<br \/>\nIn einem Sieb abgie\u00dfen und ausdampfen lassen, gegebenenfalls in einem Tuch restliche Feuchtigkeit auspressen.<br \/>\nWenn die Masse noch lauwarm und trocken ist, zerbr\u00f6selten Feta zugeben und mischen.<br \/>\n2 Eier, etwas Salz und Muskat zugeben und eventuell mit etwas Semmelbr\u00f6sel verfestigen.<br \/>\nBratlinge formen, in K\u00fcrbiskernen w\u00e4lzen und goldbraun ausbraten.<\/p>\n<p><strong>F\u00fcr die Sauce:<\/strong> Tomatenmark in einem breiten Topf mit etwas Oliven\u00f6l anbraten und immer wieder mit Rotwein abl\u00f6schen und etwas einkochen lassen.<br \/>\nWenn es sch\u00f6n braun und s\u00e4mig ist, ist die Basis der Pfeffersauce fertig.<br \/>\nIn einem anderen Topf etwas rosa Pfeffer mit etwas Zucker karamellisieren.<br \/>\nMit etwas Cognac abl\u00f6schen oder flambieren und mit der braunen Saucen-Basis aufgie\u00dfen, gegebenenfalls mit etwas Kartoffelst\u00e4rke binden.<br \/>\nZum Verfeinern etwas Sahne, Creme Fraiche oder Hafersahne zugeben.<\/p>\n<p><strong>Als Beilage<\/strong> empfehlen wir Bratkartoffeln und Blumenkohlr\u00f6schen.<br \/>\n<strong>Tipp der K\u00fcche:<\/strong> Etwas
